Chewy Chocolate Chip Cookies




WHAT YOU NEED:
2 cups PLUS 2 tablespoons of all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks of butter (12 tablespoons) MELTED AND COOLED!
1 cup brown sugar (light or dark, you pick. Personally I like dark, gives it a richer taste)
1/2 cup white sugar
1 egg PLUS one egg YOLK
2 teaspoons vanilla extract (if you "sneeze" and pour extra vanilla in, no one will mind...)
1 1/2 cups semisweet chocolate chips

WHAT TO DO:
1. Set oven to 325, have oven racks placed in the center.

2. Mix dry ingredients  (flour, baking soda and salt) in a medium sized bowl with a fork or whisk.

3. Mix wet ingredients (butter, brown sugar, sugar) by hand or with an electric mixer (true Fatties use a mixer).

4. Beat in egg, yolk and vanilla to the wet ingredients. Add dry ingredients (don't add in batches. Pour the whole thing in, otherwise you'll make a cake batter!).

5. When the dough looks awesome, add the chocolate chips and stir by hand.

Eat some dough (quality control). :-)

6. Grab a good sized ball of dough and plop it on your un-greased cookie sheet (use parchment paper if you have it). Don't make the balls perfectly round. The more rigidity the dough has, the more rustic they will look.

7. Bake for 12-15 minutes rotating cookie sheets 3/4 through. Cookies will be done when they are golden brown and the edges have some structure (to test, take the sheet out of the oven and lift the edge of a cookie, if it lifts and your finger doesn't puncture it, they're ready).

Let them cool until you're not afraid you'll burn your tongue.

So easy! Once you've made these once or twice, they will literally take you 15 minutes to prepare!
