Chewy Chocolate Chip Cookies (CCCC)

CHEWY CHOCOLATE CHIP COOKIES

Such a simple and familiar dessert. Too bad most people have never had an exceptional cookie. A great chocolate chip cookie is chewy, gooey and a little messy. A BAD cookie is cake-like or dry or burnt or a weird looking blob stuck to a cookie sheet.

The secret to these cookies? Melted butter cooled to room temperature. I've found that if the butter is added at room temperature, the cookies little muffin tops. Before I start making the cookies, I melt the butter in the microwave for about 20 seconds, stir and put it in for another 10. Keep doing that until all the butter is melted then stick your bowl or mug of butter into the freezer so it has a wee chance to cool down, but not harden.
