Pumpkin Ravioli


THE RECIPE!

1 cup ricotta cheese
1 1/4 cup canned pumpkin
1/4 parmesan cheese
2 tablespoons honey
1 teaspoon pepper
1/2 teaspoon salt
2 teaspoons italian herb seasoning
1 package wonton wrappers (I like the circular ones, no one wants to be a square!)
1 egg beaten

FOR THE FILLING:
Mix the first 7 ingredients into a medium sized bowl. Give it a taste, and add more salt, pepper, honey and italian herb seasoning as you see fit.


HOW TO STUFF!
Open your wrappers and place one face up (flour side down) place a dollop of filling into the wrapper and line the edges with egg (just plunge your finger into the egg and paint!).


Place another wrapper (flour side up) on top and press down lightly. When you have a decent seal, pick the wrapper up and starting from the middle, push the are out and press firmly on the edges.


Don't be skimpy on your filling, but be aware that over-stuffing can lead to destruction. That's right, destruction!

TO COOK!
Just plop in a pot of boiling water for 1-2 minutes (until they float) and strain!

HOW TO EAT!
There is an endless combination of sauces to try! Here are some of my favorites.

Cream Sauce:
1 tablespoon butter
1 clove garlic
4-5 stalks of asparagus cut into bitable pieces
5 button mushrooms cut into bitable pieces
1/4 cup cream
Parmasean cheese

On medium heat, melt the butter with the garlic, add asparagus and mushrooms and cook until just tender. Add cream and cook for another minute or so until cream is warm.

Pour over ravioli and sprinkle with cheese!
(yields enough sauce for 5 ravioli)

Dessert Ravioli:
1/2 cup butter
1/4 cup brown sugar
1 tablespoon of pumpkin pie spice
dash of salt

Melt butter over medium heat, add brown sugar, pumpkin pie spice and salt. No it's not healthy, yes it's awesome!
(enough for 5 ravioli)

Olive Oil Drizzle:
Drizzle olive oil over ravioli, add some salt and pepper to taste and sprinkle with parmesan cheese for the best way to taste the filling!

Didn't finish your entire batch of ravioli in one sitting? While these tasty bundles are best fresh, they can be stored in a zip lock bag or tupperware container for up to 4 days, don't let them touch because they will stick together! For a longer storage solution stick em in the freezer!
